I had to laugh at myself a few weeks ago because I was having one of those moments where I suddenly and truly felt like a grown up!! Ha!! I know that sounds funny but even though I'm...mmmhmm...pushing 30 years old and have two kids in school I still usually feel like a teenager at heart. Besides the fact that I can't stay up til midnight anymore and get heartburn if I eat too much pepperoni pizza (Ha!!) inside I'm still 16 years old. So, a few weeks ago when I bought a roast and actually put it into the crock pot Saturday night so that it would be ready for Sunday at lunch I was so very proud of myself!! My mom always made us roast for Sunday lunch growing up and I felt especially domestic when I woke up Sunday morning and could smell the roast cooking. Well...after church Sunday morning, I picked up the boys from class and was excited to get home and eat our yummy (and very tender roast) when I ran into Jill in the church hallway. She asked me if we wanted to go to lunch with her family...uh oh...what to do!? My mind bounced between roast or lunch with friends, roast or lunch with friends...obviously, the decision wasn't really all that hard...LUNCH WITH FRIENDS it was!!!! When we got home from having lunch out, I removed our roast from the crock pot to save for dinner that night but was kind of disappointed that my perfectly planned and prepared lunch hadn't worked out. I called my mom and told her the funny story...she laughed, of course!!
This past Sunday, I was able to take the above picture and text it to my mom saying that I had again bought a roast, put it in the crock pot Saturday night and cooked it all night for a very yummy lunch Sunday after church. This time, however, we actually ate our roast for lunch!! Ha!! It was delicious!! The roast was so tender and the potatoes and corn were perfect. In fact, we're eating the leftover roast with BBQ sauce as sandwiches for dinner tonight!! Yum!! I have to admit that I was proud of myself, yet again, when I put that roast in on Saturday night. I really don't know why but it makes me feel so motherly!!
Sunday lunch wasn't only monumental because we actually ate our pre-planned lunch but also because Ashtyn decided to try a biscuit for the very first time!!!! Woohoo!!!! He eats toast but has always avoided biscuits because they are so soft in the middle. (He likes crunchy foods the best...) On Sunday, though, we convinced him to try a biscuit and he loved it!! Sure, he dipped it in ketchup (yuck!) but at least he ate it. He could dip strawberries in ketchup if he wanted to and I wouldn't complain as long as he would eat them!! It may be very teeny tiny baby steps but Ash is definitely making progress...one day at a time!! Good job Ash!!
Here's to many more well planned out and deliciously prepared Sunday lunches as a family!!!! (And to me feeling like a grown up more often!! Ha!!)
